Pantry Muffins

While you’re home and looking for family activities plus ensuring you have healthy meals…look in your pantry and see what you can create from what you have! I bet you will have some fun getting creative, make some healthy meals, and save money by using up ingredients instead of wasting things!
I grabbed several items like unused quinoa, oats, chia seeds and flax to grind up and make a flour blend. Then, I made some healthy bananas muffins with this flour mixture. Plus, for the added nuts I used a mixture of pecans and some nut granolas that I had half used bags of.

These are very filling and fiber filled. The banana makes them moist and delicious! I didn’t have to go out and buy anything, but I was able to make over 60 “pantry” banana muffins.

Here’s the recipe!

Preheat the oven to 350 F. Search your pantry for flours or grains you need to use up.

Ingredients

  • 2 cups of flour mixture
  • 3 ripe bananas -1/4 cup grass-fed butter
  • 1/4 cup milk of choice -1 tsp salt
  • 1 tsp baking soda
  • 1 tsp flavoring extract (vanilla, almond, orange)
  • 1 egg
  • 1 cup sugar (I used coconut sugar)
  • 1 cup nuts or nut granola

Mix ingredients together. Make sure to line or grease muffin tins. Put into muffin tins. Bake for 20 minutes.
